Pav Bhaji

Ingredients:

  • Butter- 1 tbsp + 1 tbsp
  • Onion – 1 medium (finely chopped)
  • Tomato- 3 (finely chopped)
  • Potato- 2 (boiled and peeled)
  • Green Peas – 1/4 cup
  • Green Capsicum – 1/2
  • Red chili powder – 1 tsp + 1/3 tsp
  • Turmeric powder – 1/4 tsp
  • Salt to taste
  • Pav Bhaji powder – 1 tbsp + 1/2 tsp
  • Coriander – 1 tbsp + 1/2 tbsp (finely chopped)
  • Kasuri methi/ dry fenugreek leaves – 1 tsp + 1 tsp
  • Ginger garlic paste – 1 tsp
  • Lemon – 1/2
  • Red food colour – 3 drops (optional)

Instructions:

  • Add 1 tbsp butter in a large kadhai, add 1 tsp refined to avoid evaporation of butter.
  • Add chopped tomatoes, boiled potato, chopped green capsicum and green peas. Cook it for 2 minutes on medium flame, add salt and water, cook for another 3 minutes with closed lid and mash them well for making a smooth texture.
  • Further, add turmeric powder, 1 tsp red chili powder, 1 tsp Kasuri methi, 1 tbsp Pav bhaji powder and salt to taste.
  • Now, make a space in the middle of kadhai by scraping the bhaji in corners. In the space, add 1 tbsp butter, 1/3 tsp chili powder, 1/2 tsp Pav bhaji powder, 1 tsp Kasuri methi, 1 tsp ginger garlic paste, finely chopped onion and 1/2 lemon juice. Add red food color and mix well.
  • Boil the bhaji for next 5 minutes and mash them well to adjust consistency.
  • Garnish the bhaji with 1/2 tbsp finely chopped coriander.
  • Serve the hot bhaji with butter toasted pav.
